Channeling is how even the water comes through the shot. Usually channels form when the puck is not uniform, and random channels will form like soil erosion. I’ve measured extraction across the filter, but if you knew the flow rate per filter hole, you could better measure it.

Spent grounds have no more CO2 or coffee to extract so they don’t channel much.
